What are the spiritual meanings of different types of animals – sheep, goats, dove, etc. in ancient writings?

I remember this funky guy who had personal hygiene issues back in my Army days that everyone use to call “possum”
Sheep/lamb was used as a sacrifice and its blood was placed on the doors of the jews in egypt so that the angel of death would “pass over” them. As for being compared to humans, I think they got that screwed up somewhere… since sheep/lambs were used in sacrifice (and not for remission of sins). Goats, also used in sacrifice, was for remission of sins… I guess the writers of the New Test didn’t know much about the Old Test when they tried to compare goats to non-believers and sheep to believers. To me, sheep being herd animals, then being used to symbolize humans would seem that they simply follow whoever is holding the staff – to sheep, it doesn’t matter the character of the person holding the staff… they just follow… Whereas goats are not like that… domestic goats are herd animals out of necessity… but wild goats are not herd animals in the same sense. They may come together with other goats, but most of the time they simply do their own thing. You don’t find herds of goats, in the wild, huddling together like you do with sheep.
Doves – gentle… the only other comparison in the bible for that is the symbol of the holy spirit. It’s not really given a comparison to people.
Other religions… it would take forever to list what it means. I simply went by the bible because of your “sheep a believer” reference.
To those of the world, they assimilate the characterization of animals to humans. For example, in Ezekiel’s Vision of the wheels with the four heads and all the eyes, The four faces, one of a cherub, face of man, the face of a lion, fourth of a eagle.
The cherub represents, the child like who’s manners are that of a child, shall enter the kingdom of heaven. The face of a man, represents all worldly men who are natural men, who love this world and live it to the fullest on their own terms, and are an enemy of God. The face of a lion, represents, the men who are the rulers of this world who search and prey on the helpless as they seek power and praise from those under them, while the eagle, represents the proud and prideful of this world, who are sharp eyed and represent the lawyers and false prophets and such who set themselves up as saviors of mankind from all levels of worldly folly.
To finish this sight of the Ezekiel’s wheel, the eyes represent our past ancestors spirits, that watch over Gods chosen, down through the ages. Jacobs ladder is made up of good spirits, that reaches heaven, so as the Father, knows all that we do while in the flesh here on earth.
Of course this is my interpretation I received through the spirit, knowing any who read this will deny this interpretation for it’s not in line with the worlds interpretation. Yet it helps me see the world for what it really is.
horse symbolizes strength, sheep a believer, etc. There seems to be many more – dogs, pigs, hedgehogs, lion, etc.

Well, the ones you defined already, is correct….
Pigs = Unclean spirit.
Dogs = Gentiles or false Prophets of Israel, depends on the usage.
Lion = Messiah or Satan depend on the usage.
Ant = The power of Yahweh manifest in thing that are despised or weak and things that are not.
Anyone as a ant, weak as a ant could be the ant, but yet strong according the wisdom and strength of this small creature.
